PIN definition centralization

Hello,

I think the project and the result are really brilliant!

I would like to see a file created the next time the source code is revised or an existing central file used as a PIN definition - all PINs are managed centrally in one place.

This would make it much easier to adapt to other hardware or PINs on the ESP.

The pins for the display are in the platformio.ini file.
Think the only other ones I could define would be for the encoder.

SPI and I2C will use the pins specified by the board definition.
