Consider using kafka rather than RabbitMQ

Having run with RabbitMQ for a couple of years and reading more about kafka, perhaps the latter is a better fit.

The idea of the consumer processes being in control of where they're up to regarding messages is attractive.

Also consider RabbitMQ streams, because this would allow a gradual changeover to streams and provide the same benefits.
