Custom map types aren't supported as far as I know, and transferring them to vertex colors to be able to bake them adds a bit of effort to the workflow (Geometry Nodetrees need to be applied, values need to be copied over manually etc). Examples for custom maps would include e.g. directional "anisotropic" curvature maps, bent normal maps, etc.
Describe the solution you'd like to be implemented
My suggestion would be a new "Attribute" map type which would allow you to select any attribute registered to the object (or to a pair of objects in the case of a highpoly-lowpoly bake). Since Attributes can be set manually, via Geonodes and via script this would allow for a huge number of specialized maps to be baked without a lot of extra user effort.
