Provide parity with Apollo Server for configurable options available for the embedded sandbox

There are numerous sandbox configuration options in Apollo Server https://www.apollographql.com/docs/apollo-server/api/plugin/landing-pages/#options which are not exposed/available to be set for the sandbox exposed by Router.

Id like to have the same exact options available, we have leveraged a good deal of them

Describe alternatives you've considered

Writing our own Rust plugins, but we have been advised that is not the recommended integration path Apollo wants us to use (want to stick with off the shelf router binaries)
