[opentelemetry] test audit plugin next to log plugin

Context

The audit logging plugin will be derived from the logging plugin with both running in its own namespace. Both plugins will depend on the same CRD.
We need to validate that the update of one plugin collector will not affect the other plugin and vice versa.
