What did you expect?
Normal behaviour for applications on macOS is to stay open, even when all windows are closed. This allows for [cmd]-[tab] switching back to the application and using a shortcut like [cmd]-0 or [cmd]-1 to open the main window again.

Element X runs as an iPad app on macOS which means we don't have any control over the app's lifecycle like a traditional macOS app as it is entirely defined by Apple. Another way you can see this is that when you quit the app and look in Activity Monitor, macOS will still consider it to be running and the only way to truly quit the app is to force quit it.
