[Feature request] Ability to use a custom OpenAI API URL

Context

For various reasons, some companies may prefer selfhosting their own LLM rather than using OpenAI's services. One of the most popular ways to selfhost a LLM is Ollama. This tool provides an OpenAI-like API, which may probably help implementing this feature.

Expected feature

A way to use Ollama or any service providing an OpenAI-like API, for example through env variables.

I know Seer is not ready to be self-hosted yet, I'm just adding this request for your backlog
