DevOps: Setup analytics

This is not strictly necessary, but it would be nice to have analytics. We can host https://posthog.com/docs/self-host on one of our servers (like noodlebar). It can be beneficial for learning about issues and how our app is used, as well as it is very professional to have analytics. We would probably need a cookie banner though
