Upgrade the kubernetes api version from v1beta1 to v1

Using kubebuilder on the project displayed the following message:

This highlights that the CRD API is using a deprecated version and may well stop working at some point. We should aim to upgrade the project to remove the deprecations.

Looking into this further, it looks like this is the go/v2 plugin in the PROJECT file that needs to be upgraded.
