Add telemetry to hop-node for easy debugging of problems with a distributed network #560

If people are having issues, we need to know what is going on without them coming to us every time.

Data to collect if needed (no private info like RPC keys, private keys, etc.):

  • Which RPC provider are they using (but not their API key)?
  • Which version of the bonder they are running
  • resource usage (mem, cpu, disk)
  • latest sync state
  • current items processing (transfer ids)
  • item processing errors (event sync error, broadcast error, etc)
  • maybe current balances, credit/debit
  • (Many others - think through this)
