The formula I use for the the foods is generally each base food item (crop produce) provides 1 hunger plus 1 extra for having to craft. Fruit juice requires on food item plus crafting makes 2, fruit salad two food items plus crafting for 3.
Fruit salad does give back more saturation, so in actuality it does provide more nourishment than just comparing the food values would suggest.
