Are there any plans for a Flatpak version of LPrint? I would like to install this on Linux Mint but want automatic updates and easy uninstalls and re-installs rather than installing from source.

I'm not sure whether Flatpak allows for applications running as root or accessing USB devices. I also have had no luck getting HTMLDOC (another one of my applications) packaged for Flatpak... :/

Will investigate...

Quick search turns up that newer versions of Flatpak now support raw USB device access, so I'll need to determine how to best create a manifest for the sandboxing it uses.

There is no support for marking Flatpak applications as servers, so you'd need to add your own startup scripts/systemd service to run "lprint server".
