Also test on Apple silicon during CI

Is your feature request related to a problem? Please describe.
We currently don't test on M1/M2 Macs during CI, and we would like to do so for two reasons:

• many of movement's users are likely to be using M1/M2 Macs
• Me and @sfmig continue getting pytables-related errors during installation on our M2 Macs, even though we thought we had gotten around this issue with PR Remove pytables as a conda dependency #104. Maybe that issue is not solved for silicon macs and we have to revert back to using conda.

Describe the solution you'd like
GitHub now provides M1 MacOS runners. We should add them to the test matrix.

According to these GitHub docs, macos-latest currently uses macos-12, while macos-14 will run on M1 (this is a beta feature).
