gedit is my preferred plaintext editor, and I have it installed via flatpak, though note that I have the same issue as well when using the native Arch package.
Whenever I go to open a text file in COSMIC Files, double-clicking opens the file in COSMIC Text Editor (fine, if unfortunate), but when I go to "Open File With," the only other option it gives is Vim (which doesn't work, FWIW).
When I use a different file manager, say Thunar or Pantheon Files, where the default text editor is set to gedit, double-clicking the file does nothing unless gedit is already open, in which case the file is opened in gedit in a new tab.
(note that I can use "Open File With" and select COSMIC Text Editor in the other file managers)
Note further that I can open a file using gedit from the terminal:
$ flatpak run org.gnome.gedit somefile.txt
One further note: gedit has no icon when in the dock, but does in the application menu
Finally, this issue is not present when using file managers in other desktop environments (namely Pantheon, Wayland or X11) on the same system.
