Like every now and then, I saw the orange "sign in" indicator urging me to sign in again. I did this, and when coming back to the frontend, all open projects and tabs were gone.

I don't know how "new" this is. However, I'm pretty sure in the past this didn't happen.

In any case, I expect all my projects and editor tabs aren't disturbed by this.

I have frequently (at least once a day) had to sign back in on my localhost docker instance, since cookies aren't persisted very long for a self-signed cert. I've never seen the behavior you described. Thus I definitely don't know how to reproduce this and am marking it as such. Can you try clearing a cookie to reproduce what you observed?
