Allow Modification of PVCs for Loki Components in the Logging Module Schema

Hello,

I would like to request the ability to modify the Persistent Volume Claims (PVCs) related to the logging module when using Loki. We have observed similar behavior with OpenSearch, and it would be extremely helpful to configure the PVCs for Loki on a per-component basis.

This enhancement would provide greater flexibility in storage configurations for different Loki components and improve adaptability across various deployment environments.
