Need help creating a custom mention plugin

Currently I'm trying to create a custom mention plugin in my Plate UI, and right now I want it to be:

• Able to trigger with another symbol that's not @
• Doesn't go through the mention-input element (can drop this if it too complicated or impossible)
• Return a string of text or any other element that's not the default mention element (most likely <p>)

Where should I start with? And how should I do this?
