Set minimum version for jekyll-last-modified-at plugin (v1.3.2) which is now compatible with Ruby 3.2.2
Improve documentation for Apple Silicon setup:
- Add detailed rbenv configuration steps
- Update Homebrew PATH setup instructions
- Add verification steps for Ruby installation
Make Apple Silicon terminology consistent throughout docs (not referring to a specific M-version)
