Update .gitignore and clean up _etc files

- Add coc plugin to .gitignore (too many complex changes). - Add _vim/autoload to .gitignore (unnecessary, stored in Dropbox). - Remove _etc folder and its files: Some Docker, skhd, and yabai files are stored in Dropbox; can re-add if needed.
